There is a brief moment each summer when peaches ask for very little from us. Rather than disappearing beneath spices or long baking, they become the centerpiece of a simple chilled pie that celebrates their fragrance, sweetness, and delicate texture.
Recipes like this remind us that refinement often comes through restraint. A buttery crust, ripe peaches, and the quiet pleasure of gathering together while summer lingers just a little longer.

From Strawberries to Peaches
The inspiration for this pie was tucked inside one of my well-loved vintage Cooking Magic binders: a simple French Strawberry Pie made with a baked pastry shell, softened cream cheese, fresh strawberries, and a glossy jelly glaze.
Rather than waiting for strawberry season to return, I adapted the original recipe for the peaches of late summer. The strawberries became ripe peach slices, while the currant or apple jelly was replaced with a softly cooked apricot glaze made from fruit already waiting in the pantry.
The result remains true to the spirit of the vintage recipe: uncomplicated, seasonal, and elegant enough to place at the center of a summer table.
A vintage recipe is often less a set of rigid instructions than an invitation to cook with the season.

Peaches in the French Manner
A simple French-inspired summer dessert featuring fresh peaches nestled in a creamy filling and served beautifully chilled. Elegant enough for a garden luncheon, yet wonderfully easy to prepare when peaches are at their sweetest.
Ingredients
- One baked 9-inch pastry shell, completely cooled
- 1 (9-ounce) package cream cheese, softened
- 4–5 ripe peaches, peeled and sliced (about 3 cups)
- 1 can apricot halves, with 2–3 tablespoons reserved syrup
- 1 teaspoon fresh lemon juice
- Optional: toasted sliced almonds for garnish
Method
- Spread the softened cream cheese evenly into the cooled pastry shell, creating a smooth layer across the bottom.
- Arrange the peach slices over the cream cheese in overlapping circles, working from the outside toward the center until the pie is beautifully covered.
- In a small saucepan, combine the canned apricots, a few tablespoons of their syrup, and the lemon juice. Cook gently over low heat until the fruit softens, then blend or mash until smooth. Continue cooking for another minute or two until the glaze lightly coats a spoon. Allow it to cool slightly.
- Using a pastry brush, gently glaze the peaches with the warm apricot mixture until they shine. Refrigerate the pie for at least 30 minutes before serving. If desired, garnish with toasted sliced almonds just before bringing it to the table.

Arrange the peaches generously across the filling, creating a pie that celebrates the abundance of summer. Whether layered more deeply or arranged in a single overlapping spiral, the fruit itself should remain the centerpiece.
Chilling
Allow the pie to chill thoroughly before serving.
This resting time gives the filling an opportunity to set while allowing the flavors to gently come together.
A chilled pie should feel cool, creamy, and refreshing rather than firm.
