Serves: 4 as a light supper

Ingredients

  • zucchini
  • ground turkey
  • yellow onion, finely chopped
  • shredded mozzarella
  • grated Parmesan
  • toasted breadcrumbs
  • sliced almonds, optional
  • dried Italian herbs, thyme, basil, oregano, or herbes de Provence
  • Salt and black pepper, to taste
  • Olive oil or butter, as needed

Directions

  1. Preheat oven to 375°F.
  2. Slice the zucchini lengthwise and scoop out the centers, leaving enough flesh to hold their shape.
  3. Chop the reserved zucchini flesh and set aside.
  4. In a skillet, warm a little olive oil or butter. Add the onion and cook until softened.
  5. Add the ground turkey and cook until no longer pink, breaking it apart as it cooks.
  6. Stir in the chopped zucchini flesh, herbs, salt, and pepper. Cook until the mixture is savory and any excess moisture has mostly cooked off.
  7. Remove from heat and stir in some of the mozzarella, Parmesan, and breadcrumbs.
  8. Spoon the filling into the zucchini shells and place them in a baking dish.
  9. Top with the remaining cheese, breadcrumbs, and sliced almonds if using.
  10. Bake for 25 to 35 minutes, or until the zucchini are tender and the tops are golden.
  11. Let rest briefly before serving.
