Strawberries & Cream Gâteau

— Crème Fraise Couronne

A puff ring cake filled with cream and fresh strawberries, dusted with powdered sugar on a vintage cake plate

A crown of pastry and cream, ribboned with strawberries — fit for queens and midsummer dreams.

This airy gâteau is inspired by French pâtisseries and late-summer birthdays — a delicate pâte à choux ring, filled with sweet whipped cream and ribbons of macerated strawberries. It’s a crown of celebration and softness, the perfect finale to an August menu. From The Gilded Table: August Edition.

Notes:
Pipe the choux ring with confidence and bake until deeply golden for structure. You may substitute mascarpone for some of the cream for added richness. Store chilled and serve within a few hours for the best texture.
