My favorite time to make this tart is when the tomatoes are just reaching their peak — warm from the sun and fresh from the outdoor market. I love arranging each slice like brushstrokes across the ricotta, wiping olive oil from my fingers, and serving it still warm with a glass of something cold and sparkling. It feels like the kind of dish that doesn’t just feed, but paints the table.
