A note from Bianca:
The first time I ever made gougères, it was from a Julia Child recipe — part of a dinner party I hosted during those hopeful, apron-tied years when I was still learning to trust my hands in the kitchen. I served them just before a first attempt at lobster bisque, whispering “please, please, please work” under my breath as I stirred and plated with trembling hands. The scent of butter and thyme, the moment the puffs rose golden in the oven… it felt like alchemy. These little cheese puffs have been a staple ever since — generous, golden, and quietly impressive, just like that evening. Now they grace the summer menu with a glass of crisp white wine and old memories tucked in between.
